Homemade Pork and Beef PattiesLunch20 min

Homemade Pork and Beef Patties

Soak the crustless bread in milk for 5 min, then gently squeeze it out. Grate the onion and garlic on a fine grater or blend them. Mix the ground meat, bread, onion, garlic, egg, salt, and pepper; knead for 2–3 min and beat the mixture against the bowl several times so the cutlets hold their shape. With wet hands, shape 10–12 oval cutlets and coat them in breadcrumbs. Fry in heated oil over medium heat for 4 min on each side until golden brown. Pour in the water, cover with a lid, and cook over low heat for 8–10 min until done—the juices should run clear when cut.

Kefir semolina cakeLunch20 min

Kefir semolina cake

Mix the semolina with kefir and leave for 30 minutes at room temperature so the semolina swells. Preheat the oven to 180 °C. Grease a 22–24 cm diameter pan with butter and sprinkle with a pinch of semolina. Beat the eggs with the sugar and vanilla sugar until light and fluffy, 3–4 minutes. Add the swollen semolina, melted and slightly cooled butter, flour, and baking soda, and mix until you have a uniform thick batter. Pour the batter into the pan and bake for 35–40 minutes until golden on top; a skewer inserted into the center should come out dry. Let the mannik cool in the pan for 10 minutes, then transfer it to a wire rack. Serve with jam, berries, or sour cream.
